Meet the Coborn’s Market & Table Store Director

We’re excited to introduce Kristine Holthusen, store director of Coborn’s Market & Table. Kristine will lead the Plymouth team as we launch this flagship location, shaping it into a true destination – one our guests can rely on for quality, freshness, and an exceptional experience.

Kristine has a strong track record of success in opening and operating new and remodeled stores. Most recently, she led the Coborn’s location in Otsego, MN, through a major remodel in 2024. Prior to that, she played a pivotal role in the successful opening of our Coborn’s store in Buffalo, MN, in 2021 – helping to build a strong team while fostering meaningful connections within the community.

Since joining Coborn’s in 2014, Kristine has held a variety of additional leadership roles across the organization, giving her a well-rounded perspective on both operations and guest experience. She’s known for her thoughtful leadership, passion for fresh food, and commitment to creating stores where both guests and team members feel welcomed and inspired.

We can’t wait for you to meet Kristine and the entire Plymouth team when Coborn’s Market & Table opens in March!

Take a Seat at The Global Table

We’re excited for our culinary partnership with celebrated Twin Cities chef David Fhima. At The Global Table, guests will find three chef-developed fast-casual concepts—Basta Pasta, inspired by regions across Italy; Abuela’s Mexican Kitchen, rooted in family tradition; and Brother’s Burgers, serving handcrafted gourmet burgers. Each reflects Chef Fhima’s commitment to bold flavors and responsibly sourced ingredients.

Coborn’s Market & Table is also excited to welcome the third location of The Buttered Tin, founded by James Beard–recognized chef and “Cupcake Wars” winner Alicia Hinze. Guests can enjoy fresh-baked pastries along with signature breakfast and lunch favorites.

To make the experience easy and inviting, the store will offer flexible food-court-style seating, outdoor seating in warmer months, and convenient ordering—online, at kiosks, or directly at the restaurant counters. The location will also debut Penny Horse Parlor, a nostalgic ice cream spot featuring Minnesota favorite Kemps.

These offerings will deliver guests convenient, chef-driven, high-quality meal options any time of the day.

Next Generation Liquor Store: Coborn’s Wine & Spirits

We’re proud to be an anchor business in The Boulevard development in Plymouth and excited to bring a complete, enhanced shopping experience to residents and the greater community.

As construction on Coborn’s Market & Table moves forward, so does progress on our next-generation liquor store, Coborn’s Wine & Spirits. Spanning approximately 8,600 square feet, the store will offer a comprehensive selection of classic brands, local favorites, and specialty items across wine, beer, spirits, THC products, and non-alcoholic options.

We can’t wait to welcome guests into this modern, elevated space – complete with sampling opportunities and community events designed to bring people together.

A Celebration of Minnesota’s Food and Seasons

Our new flagship store, Coborn’s Market & Table, is inspired by everything that makes Minnesota’s food culture so special — local flavors, strong community roots, and a deep appreciation for the changing seasons.

That spirit is visible the moment guests arrive. Before even stepping inside, they’re greeted by stunning, one-of-a-kind murals that wrap the exterior of the building. These vibrant works of art celebrate two things that define Minnesota — our wholesome food and four seasons. The murals capture the essence of how we live, eat, and gather here in the North. They also pay tribute to our proud heritage as Minnesota’s oldest grocery chain, serving generations of families with care, quality, and community at heart.

Construction Continues to Move Along

Construction continues, and we’re thrilled to share that the shell of the building, including the exterior and roof, is now complete. The parking lot is starting to take shape, giving a first glimpse of the space where guests will soon shop, dine, and gather.

Inside the walls, our vision for a unique shopping experience is coming to life. Guests can look forward to:

  • A wide assortment of fresh produce and meat, and Minnesota-made products
  • Premium made-to-order restaurant meals alongside convenient ready-to-eat options
  • A welcoming space designed as a community hub for shopping, dining and connection

The project remains on schedule for a March 2026 opening, and we can’t wait to share more updates as the store continues to take shape.

Where Grocery Meets Dining: The Grocerant

This exciting new location introduces a new grocerant concept — blending a full-service grocery store with chef-driven dining experiences under one roof. Guests will be able to shop, dine, and connect in a space designed for quality, local pride, and family appeal, featuring culinary creations from locally celebrated chefs.

Key highlights include:

  • Chef David Fhima – developing three fast-casual concepts specializing in gourmet burgers, Italian, and Mexican cuisine
  • Pastry Chef Alicia Hinze – founder of The Buttered Tin, bringing scratch-made breakfast, brunch, lunch, and delectable baked goods
  • Penny Horse Parlor – a nostalgic nod to Coborn’s iconic penny horse, serving hand-scooped ice cream, dirty sodas, and other frozen treats in partnership with Minnesota-based Kemps

Guests can enjoy indoor seating by the fireplace, outdoor seating with a local mural and performance stage, and a small playground for kids. Fresh salad bars, Minnesota classics in the hot bar, sushi, and ready-to-eat meals complete the experience.
